Details

Ricotta Salata is a traditional Sicilian cheese speciality. Caseificio La Cava makes this version using sheep's milk whey, sheep's milk and salt, followed by salting, drying and a short ageing process. This gives the cheese its compact texture and characteristic savoury flavour.

It is particularly popular grated over pasta dishes, especially tomato-based and vegetable recipes. It is a classic ingredient in Pasta alla Norma, and can also be used with salads, baked vegetables and other Mediterranean dishes. It can also be enjoyed on its own or incorporated into various recipes.
